Does Nutrient Density Have a Color?

Adding color is a fun way to make something more exciting.  Did you know adding more color to your plate means increased nutrient density which promotes better health? Eating food from all the colors of the spectrum, provides many beneficial nutrients and antioxidants not available on a monochromatic plate.

 

Besides, eating from a plate with multicolored produce makes you feel like you’re doing something good for your body.

 

Beige is the color of low nutrient density and processed foods. You’ll want to include hues of blues, and reds, yellows, and greens on your plate. A small amount of beige is fine but strive to add more vibrant colors.

 

Different hues contain phytochemicals particular to that color.

 

For example, foods that have an orange hue are rich in the carotenoid beta-carotene, which is a powerful antioxidant. Beta-carotene is converted to vitamin A in the body. Vitamin A is important for immune functioning, eye, skin, and bone health. Foods rich in Beta-carotene include carrots, pumpkin, sweet potatoes, cantaloupe, and apricot.

 

Green foods are high in nutrient density and help the liver in removing cancerous compounds. Broccoli, for example, has phytochemicals that have anticancer properties. Rich in chlorophyll, consuming green foods may cause others to be envious of your healthy glow. They are chock full of potassium, folic acid, and vitamin K. Chlorophyll-rich foods include broccoli, spinach, kale, and parsley.

 

Foods that are oh so blue, and purple too, are those hues because of their anthocyanin content. The richer and darker the color the more anthocyanin it contains. Anthocyanin promotes healthy blood pressure and helps prevent heart disease while lowering your risk of cancer. Foods rich in anthocyanin are eggplants, pomegranates, plums, and blueberries.

 

Foods that have a reddish hue are rich in lycopene. Lycopene is a carotenoid that protects against prostate cancer and helps prevent heart attacks. Cooking enhances the phytochemical activity of lycopene by allowing your body to assimilate this nutrient. Foods rich in lycopene include red bell peppers, tomatoes, watermelon, guava, pink grapefruit, and papaya.

 

Yellow foods are rich in many types of antioxidants including carotenoids and, bioflavonoids, which are water-soluble pigments that act as antioxidants. Yellow foods, such as lemons, are also rich in the immune booster, vitamin C. Yellow foods assist in wound healing and maintaining healthy skin.

 

Pineapple may be beneficial to your digestion and help inflammation, as it is packed with an enzyme called Bromelain. Other antioxidants available in yellow foods include lutein and zeaxanthin. Try squash, lemons, pineapples, and peppers to make your plate a little sunnier.

 

Eating a rainbow array of foods provides high nutrient density and allows you to get a variety of antioxidants.
